Ginny’s Boozy Bellini
This classic, classy cocktail, one of Italy’s most famous, the Bellini, has been kicked up a notch with the addition of Ginny’s Gin. Invented by Giuseppe Cipriani, owner of Harry’s Bar in Venice, the Bellini has been a seasonal specialty there since 1948 and a favorite of Ernest Hemingway, Alfred Hitchcock and Orson Welles. With fresh, fragrant seasonal peaches, you definitely need this one in your cocktail repertoire this summer.
WHAT YOU NEED
- 2 oz Ginny’s Gin
- 1 oz fresh peach puree*
- Chilled Champagne, Prosecco, Cava or sparkling wine to top
- Fresh peach slice for garnish
*To make the peach puree enough for 6 Bellinis
- 4 peaches (white, pitted and peeled)
- 3 ice cubes
- 1 teaspoon or to taste of fresh lemon juice
- 1/2 teaspoon or to taste of simple syrup
DIRECTIONS
Blend all ingredients until smooth. Can be strained to make it more like juice. Keep in the fridge for up to a week in a well-sealed container, but better used immediately ; )
TO MAKE THE COCKTAIL
Shake gin & peach puree with ice, pour into a Gabriel-Glas stemless glass & top with sparkling wine. Garnish with a peach slice. Your Bellini will only be as good as your peaches, so chose those that are perfectly ripe.
